A keylogger may be what you're looking for. Keyloggers log every keystroke a person types. Some even have special features that email you screenshots at a set interval. (Note: there are also hardware keyloggers that you physically plug in between the keyboard and computer).

Just remember to consider any legal rammifications before using a keylogger. I'm sure there are some uses of a keylogger that are illegal, but there are also many legal ways to use a keylogger (e.g. checking up on the kids, trying to catch a cheating spouse, etc.)
